1 cup sugar1 cup brown sugar1 3/4 cup all purpose white flour3/4 cup cocoa1 1/2 tsp baking powder (half at high altitude)1 1/2 tsp baking soda (half at high altitude)1 tsp salt2 eggs1 cup skim milk1/2 cup veg. oil3 tsp pure vanilla extract1 cup boiling water
Preheat oven to 350 and line cupcake tins with paper cupcake liners.
Combine dry ingredients into a mixing bowl. Add eggs, milk, oil and vanilla extract. Whisk until smooth.
Add the boiling water and mix until blended.
Fill cupcake liners to 3/4 full and bake for 20 - 25 minutes or until center of cupcake springs back when touched. Let cool and pipe with frosting of your choice.
