Quinoa Salad with Lemon Vinegarette

Ingredients
Salad1/2 c. dry quinoa (then cook it in water)1/3 c. red onion, diced1 orange, peeled & chopped1 avocado, peeled & chopped1 can of black beans, rinsed & drained 1 c. corn1/3 c. cilantro, choppedDressing:1/4 c. lemon juice (about 2 lemons)2 cloves of garlic, mincedpinch of sugar3 tbsp. EVOOsalt & pepper to taste
Directions
Cook the quinoa according to package directions. Mix everything together. Serve warm or cold.
