1 eggplant1 c sliced onion1/2 jalapeno pepper4 cloves garlic1 tomato1 tbsp canola oil2 tsp grated ginger root2 tbsp plain greek yogurt1 tsp cumin powder1 tbsp garam masala1 small bunch cilantrosalt and pepper to taste
Roast eggplant in 450 degree oven
on stove saute onions and cumin in oil. Skin and chop up tomato and add to onion. Once eggplant is soft, remove from oven and cool enough to chop up. Add eggplant and rest of ingredients except yogurt. Cook for 5-10 minutes. Right before serving stir in yogurt and cilantro and squeeze a bit of lemon juice over.
