Spicy Benedictine

Ingredients
Peel the cucumber, slice longways, and scoop out the seeds. Take the firm parts and chop fine with a knife. Don't use a blender or it will be too mushy. Chop a red onion fine and put 2 Tbs into the bowl with the chopped cucumber. Put the cream cheese into the bowl also. Sprinkle 30 g of chia seeds over this. (Chia seeds help you feel full and maintain your blood sugar levels).Peel 2 large cloves of garlic and express the juice into the bowl. Add 1 tsp of dill and 1/2 tsp cayenne pepper (more pepper if you like it to kick!). Use garlic powder if you don't have fresh garlic. Stir well, so that all the ingredients are mixed together evenly. Refrigerate in a covered container 4 hours before serving. (56 g is a very filling snack with veggie sticks.)
Directions
This is a cold food & the flavors set up better if refrigerated for 4 or more hours.

Chia seeds give this snack a reason to go beyond total "junk status" but it should be a rare occasion food, none the less.
