1 cup nonfat plain yogurt3/4 cup sugar2 cups canned pumpkin2 eggs1 cup rice flour1 cup potato flour1 cup oats or oat flour1 tsp baking soda1/2 tsp salt1 tsp pumpkin pie spice.
Cream the oil and sugar together. Add the pumpkin and eggs to the mixture. Mix in flour, baking soda, salt, and pumpkin pie spice. Bake at 375 F for 10-15 minutes.
