Beefy Rice Salad Sandwiches

Ingredients
1/2 lb ground beef, 93% lean1/2 medium onion, chopped1/2 tsp thyme1/2 cup white rice, cooked1 small red bell pepper, chopped1/2 avocado, chopped1/4 cup parsley1 tbsp olive oil2 tbsp seasoned rice vinegar4 Brownberry pita thins1 cup lettuce, shredded1 medium tomato, slicedSalt & Pepper, to taste
Directions
1. Brown meat with onion over medium-high heat. Stir in thyme.

2. Combine rice, pepper, avocado and parsley in medium bowl. Add meat mixture; mix lightly.

3. Whisk together oil and vinegar. Pour over meat mixture; toss lightly. Season with salt and pepper to taste.

4. Fill pita halves with lettuce, tomatoes, and meat mixture.

Serving Size: Makes 4 sandwiches
