Fig, Arugula and Gruyere Salad

Ingredients
1 pint Fresh Figs (stems removed and sliced)2 cup baby arugula2 oz Gruyere cheese, sliced1 tablespoon fresh lemon juice2 teaspoons honey2 teaspoons chopped fresh mint2 tablespoons olive oil
Directions
Combind arugula, figs and cheese. Whisk together lemon juice, honey, mint, oil; pour dressing over top
and toss to combine.
