Bulgar Wheat Salad

Ingredients
1 c. bulgar wheat (quick cooking)- prepared according to directions24 cherry tomatoes1 large cucumber 1/4 c. red onion (or more)1 c. chopped fresh parsley1/4 c. Feta, reduced fat1/4 c. Balsamic vinegretteSalt and pepper to taste
Directions
Make sure the bulgar wheat is room temp or colder.
Chop all veggies and herbs to a size you prefer (I do 1/4 inch)
Mix everything together, including the feta and the dressing.
Add salt and pepper to taste.

For a flavor boost, add garlic, straight balsamic vinegar, or chopped fresh mint.

Serving Size: 1/2 c.
