Mexican Bean Stuffed Peppers

Ingredients
1 can black beans1 can corn1/2 c. onion1 clove garlic2 tsp. cumin2 tsp. chili powderBell Peppers to fill with mixture
Directions
Preheat oven to 400. Roast peppers 10-15 mins until soft.

Cut peppers in half, clean out all the guts :)

Mix all ingredients together and cook on stovetop to heat.

Remove peppers from oven, top with mixture. Heat in the oven approximately 4 minutes.


Serving Size: Makes 6 servings (1/2 c. per serving) which can be filled into peppers
