Chicken Piccata with Capers

Ingredients
4 pieces (1 pound) chicken breasts, boneless, skinless, sliced or pounded thin1/4 t black pepper3 T all-purpose flour2 T butter, unslated3/4 C chicken stock, unslated1/4 C fresh squeezed lemon juice2 T capers, drained (more if you love capers)Garnish 3 T minced flat leaf parsleyOptional: garnish with thin slices of lemon, salt to taste
Directions
Pound or slice chicken breast to make even for fast and even cooking.
Combine the black pepper and flour on a plate and lightly coat the chicken on all sides with the flour.
In a large nonstick skillet, melt the butter over medium-high heat. Add chicken to the pan and cook about 3 minutes on each side. Add stock, juice, and capers; reduce heat to medium and simmer about five minutes, basting the chicken every now and then with the sauce. When chicken is done, remove to a serving plate and cover with foil to keep warm.
Bring the sauce to a boil and cook another 2-5 minutes until it reduces a bit and thickens. Serve over the chicken. Garnish with a sprinkling of parsley and thin slices of lemon.
