Brown rice and spinach salad

Ingredients
2 cups uncooked batsami rice6 cups fresh spinach2 T olive oil4 T cider vinegar1.5 tsp kosher salt1 tsp black pepper1/2 tsp allspicezest of 1 orange2 cloves garlic3 stalks chopped celery3-4 small sweet peppers, roasted
Directions
Cook rice according to directions. Mix oil, vinegar, orange zest and spices, shake to combine. Combine hot rice with spinach, celery and peppers in bowl, cover and let cool. Steam from rice will wilt spinach. Once cool, pour dressing over all and stir to combine. Serve at room temperature or chilled.
