Muffins: Granulated Sugar, .75 cup Egg, fresh, whole, raw, 1 large *Flour, white, 1.5 cup Baking Powder, 2 tsp Salt, .25 tsp Nutmeg, ground, .25 tsp *Crisco Pure Vegetable Oil, 4 tbsp Milk .75 cup Vanilla Extract, 1 tspFor topping: Butter, salted, 2 tbsp Granulated Sugar, .25 cup
Preheat oven to 350. Lightly grease a muffin tin. In a large bowl, beat together sugar and egg until light in color. In a small bowl, whisk together flour, baking powder, salt and nutmeg. Pour into egg mixture and stir to combine. Pour in vegetable oil, milk and vanilla. Divide batter evenly into 10 muffin cups, filling each about 3/4 full. Bake for 15 to 18 minutes.
While muffins are baking, melt butter. Pour remaining sugar into a small bowl. When muffins are done, lightly brush the top of each with some melted butter, then dip in the sugar to coat them. Cool on a wire rack.
