Pecan-Crusted Tilapia

1/2 cup Panko breadcrumbs2 Tbsp finely chopped Pecans2 Tbsp shredded or grated Parmesan cheese1/2 tsp salt1/4 tsp garlic powder1/4 tsp black pepper1/2 cup buttermilk (add 3 tsp to reg milk to make the buttermilk)3 Tbsp flour1 Tbsp canola oil4 (4 oz) Tilapia filets
Combine the first 6 ingredients in a shallow dish or pie plate. Pour buttermilk in a second shallow dish. Place flour in a third shallow dish. Dredge each fillet in flour. Dip in buttermilk, and then breadcrumb mixture, making sure fillets are nicely coated with crumbs.
Heat oil in a large non-stick skillet over medium-high heat. Add fillets to pan and cook 3 minutes on each side or until fish flakes easily when tested with a fork and has an eternal temperature of 145 degrees.
