Pumpkin Steelcut Oat Bars - Baked

Ingredients
15 oz can pure pumpkin puree (unsalted)2 large eggs1 tsp vanilla extract1/4 cup pure maple syrup (or 1/4 cup brown sugar)1/4 cup whole wheat flour 1 cup dry skim milk powder1 tsp baking powder1 tsp baking soda1/2 tsp salt1 tsp cinnamon1 tsp nutmeg1 tsp ground ginger1 tsp cardamom3/4 tsp allspice1/8 tsp cloves243g (3 cup) steelcut oats, dry1 cup raisins, packed90g dark chocolate chips90g almonds1 cup water2g butter (to grease pan)
Directions
Preheat oven to 350 degrees.

Grease 9" x 13" casserole dish with butter.

In large bowl, beat together 2 eggs. Mix in pumpkin, maple syrup, and vanilla.

In separate bowl, mix together flour, skim milk powder, baking soda, baking powder, and spices. Gradually add to pumpkin mixture, mixing well.

Mix in oats, raisins, chocolate chips, and almonds.

Gradually add in water (1/4 cup at a time) until you have a slightly liquid consistency.

Pour entire mix in to greased casserole dish, spreading evenly through pan. Bake uncovered for 40 minutes, or until knife inserted in to centre comes out clean.

Allow to cool slightly, then slice in to 10 "bars".

    We really liked these, easy to make and very filling. We cut the size down to half a serving. They are great for breakfast or dessert, and we plan on taking them on the road as they hold up really well. I think they would be perfect for ATVing. - 5/4/14
