Easy and Delicious Low-Cal, Chicken Sloppy Joe (filling only - no bread)

Ingredients
1lb Lean Ground Chicken1 can Tomato Paste (6oz)Tempo Sloppy Joe Mix, whole packet1/4 tsp Liquid Smoke (optional)1 small onion1/4 Yellow Bell Pepper, petite diced1 large baby zucchini, chopped (optional)1 1/4 C watersalt and pepper to taste
Directions
Lightly spray a pot with light olive oil. Slightly saute the onion and bell pepper. Add chicken and brown until all water evaporates. Add water, tomato paste, liquid smoke, salt and pepper, and the Sloppy Joe Mix and turn the heat to low, cover and simmer for 8 additional minutes.

Add zucchini and cover and simmer for two minutes. Turn heat off.

Separate into 9 2oz servings (more if you added the zucchini!)

Serving Size: Makes 9, 2oz servings without the zucchini.
