Beef Veg Soup

Ingredients
1 lb beef stew meat5 stalks celery, chopped1 small onion, chopped1 can rotel diced tomatoes with green chili48 oz (or more if you like) V-8 juiceSeason with whatever spices you desire. I used: Black pepper Sea salt Cumin Red pepper flakes (go easy as it does make the soup spicy.)
Directions
Brown meat and place in crock pot
Add all ingredients and cook on medium overnight.

Serving Size: Makes 6 - 8 1 1/2 cup servings
