Spinach and Cheddar Crustless Quiche

1/2 c butter, melted3 cloves garlic chopped1 small onion, choppedsalt and pepper to taste4 eggs, beaten1 cup skim milk1 (10 oz) package frozen chopped spinach, thawed and drained1 (8 oz) package shredded 2% Cheddar cheese** You can add a pie crust if you like but it's not calculated here.
In a small bowl, whisk together the melted butter, beaten eggs, milk, thawed and drained spinach, and spices. Pour into 9" pie pan and top with shredded Cheddar cheese. Bake at 375 degrees for 30 minutes or until quiche filling is set and top is lightly browned.
