Easy and Quick Mexican Rice!

Ingredients
1cup long grain white rice1 tsp olive oil1 clove of garlic, minced1 tbsp white onion, finely chopped2 cups chicken broth1/2 cup tomato sauce
Directions
Heat oil over medium heat in a medium saucepan.
Add garlic and onion and cook for 3 minutes until softened.
Add rice and stir frequently until rice is an opaque color (about 5minutes)
Add chicken broth and tomato sauce
Bring to boil
Reduce heat to simmer and cover saucepan.
Simmer 15 minutes or until rice is cooked through and all liquid is absorbed.
Makes 4 servings
