Delicious Chicken Cacciatori

Whole chicken cut into parts- breast, wings, legs, thighs, breasts- (I cut each breast in half as well) just a little bit of olive oilWheat flour for coating the chickensalt pepper fresh thyme chili powderraw sliced baby portabella or button mushrooms 1 red bell pepper1 green bell pepper 1 onion1 large can of pureed tomatoes lots of garlic
Pre heat oven to 350. Dry the chicken pieces, season with salt and pepper, dredge in flour, brown on the stove over medium high heat in an oven friendly heavy pan (with a lid) until brown and crispy and golden brown on the outside adding a little bit of olive oil as you go to help it along- they don't need to be cooked through since they will bake in the oven. Take the pieces out of the pan,then in the same pan add roughly chopped veggies and fresh thyme: onions, garlic, bell pepper, mushrooms- let them sweat out and become tender- season with salt and pepper. Put in food process - return to pot add crushed tomatoes and chili powder. Return the browned chicken to the pan of sauce without submerging the pieces entirely. Cover and bake in the pre heated oven for 45 to 60 min. Turn the heat up to 375 and uncover during the last 15 min of cooking. Take out and let rest for about 10 minutes. Serve over pasta, rice or green salad and french bread. Delicious!
