Peanut Butter Oat Bran Cookies

Ingredients
extra light olive oilwhite and brown sugaregg or 2 egg whitespeanut buttervanilla extractwhite flouroat bran cerealbaking powderbaking soda
Directions
Preheat oven to 350. Mix olive oil with the sugars. Add the egg and mix well. Stir in peanut butter and vanilla; beat until smooth. Add remaining dry ingredients. Drop by teaspoons onto ungreased cookie sheet. Criss-cross on each cookie with the tines of a fork. Bake 10-12 minutes or until golden brown. Makes 36 cookies. Note: This is a "lightened" version of the Hodgson Mill recipe which calls for margarine and more sugars.
