Flavor-Bangin' Vegan Fajitas

Ingredients
Spinach Wraps, Guacamole, Salsa, Coconut Oil, Green Bell Pepper, Red Onion, Rice Vinegar, Extra Firm Tofu,Vegan Worcestershire Sauce, Dijon Mustard, Balsamic Vinegar, Ground Thyme, Cracked Pepper
Directions
Drain Tofu. Set on paper towels. Put paper towels over top the tofu also, and push down gently to drain more.

Begin heating 1Tbs of Coconut Oil in medium size skillet on medium-high heat.

Slice Green Pepper and Onion, and add to heated oil. Stir frequently for 5 mins until tender. Crack pepper over vegetables to taste. Add Rice Vinegar, and stir vegetables a bit to mix well. Allow to cook another 2 mins. Remove from heat, and set aside.

Add the other 1 Tbsp Coconut Oil to skillet on medium-high heat again. Slice drained Tofu into 1/4" slices. Add Tofu to heated skillet. Add Vegan Worcestershire, Thyme, Dijon Mustard, and Balsamic Vinegar. Crack pepper over skillet to taste. Stir occasionally for 5mins or until heated thoroughly.

While Tofu cooks, set out 4 Wraps. Spread 2 Tbsp Guacamole and 2 Tbsp Salsa on each wrap. Distribute onions and peppers on each wrap.

Remove Tofu from heat. Using a slotted spatula or spoon to lightly drain sauce from Tofu, top each wrap with the finished Tofu. Roll the Wraps into fajitas. ENJOY!
