Pumpkin Pie in 2 Minutes Flat

Ingredients
Filling:1/2 c pumpkin puree1 egg2 T maple syrup1 t Pumpkin Pie SpiceCrust:1 T Butter1 T Shredded Coconut1 T Almond Flour1 t Coconut Sugar
Directions
Put butter in large ramekin - microwave 30 seconds.
Mix in coconut & almond flour. Pat down to make crust. Sprinkle with a pinch of coconut sugar.
In a separate bowl mix together pumpkin, egg, pumpkin pie spice & maple syrup until smooth. Pour over crust.
Microwave for 2 minutes - check - if center is still wet microwave for another 20-30 seconds.
