1 tsp olive oilred onionred sweet bell pepper3 large white mushroom3 strips pre cooked bacon4 large eggs 2 oz of sliced Swiss cheesecooking spray
saute onion, red pepper and mushroom in 1 tsp of olive oil, set aside. Lightly beat 4 eggs and pour in pan that has been coated with cooking spray. Stir around to form omelet. place on one portion of omelet sauteed mixture, crumbled bacon spinach and then top with cheese and fold omelet in half. Cook until cheese is melted.
