Super Fall Salad

Ingredients
1 cup dry kamut (or other whole grain)1 large bunch kale, stemmed, cleaned and chopped1/2c dried cranberries1 can chickpeas, drained and rinsed1 bunch scallions, sliced thinly2-3 large beets, roasted and chopped1/4c olive oil1c red wine vinegarSalt & pepper to taste
Directions
Prepare kamut according to the package. At the last 10 minutes, add the kale in bunches and let it wilt, stirring into the grains.

Combine kamut, kale and all other ingredients. Season to taste.
