Rice and Peas

Ingredients
onions, 1 cup, choppedgreen peppers, 1 cup, choppedfresh garlic, 3 cloves, mincedoregano, 2 tbsp.cilantro, 3 tbsp.vinegar, 3 tbsp.salt, 1/4 tsp.olive oil, 1 tbsp.black pepper, 1/2 tsp.pigeon peas, 1.5 cupsbrown rice, 2 cupswater, 3-4 cups
Directions
In a sauce pan, heat oil. Add onions and green peppers until just softened.

Add garlic and cook 1 minute. Add spices and stir until fragrant.

Add pigeon peas and 1/2 cup water. Stir in tomato paste and stir until dissolved. Add remaining water and bring to a boil.

Stir in brown rice and lower heat to simmer. Cook for 40-50 minutes or until rice is set.
