Delicata Squash Caserole

Ingredients
2 -5" long Delicata squash, cubed, with skin1/2 sayoy cabbage, coarsely chopped1/2 cup sliced red pepper1 med onion, coursely chopped.1 can Black soy beans, with liquid.1 cup vegetable broth3 tbsp crumpled gorgonzolaJuice of 1/2 lemon.
Directions
Steam squash for 30 min. until skins are soft.
Place in glass oven caserole with other ingredients and cover with tin foil.
Bake at 335 degrees for an additional 30 min.

    I like this, even though the 30 minutes of baking was not quite enough to cook the other ingredients. Maybe it was my oven...but still, it is very tasty even though I didn't have quite enough gorgonzola. I'll bake it a bit more...it is pleasantly crunchy now. - 10/13/12
