Note: The Coca Cola makes this stew very sweet. If it's too much, you can substitute Schweppe's or Canada Dry Ginger Ale instead. I would not recommend Vernor's or any Diet Soda, as the flavors do not blend well. • 5oz. each of Bourbon and Coca Cola for a 2.5lb roast. (~2oz of each, per pound of beef)• 1 can of Swanson's Beef Broth/Stock.• 1/2 Yellow Onion (to be diced)• 1 Red Bell Pepper (to be sliced)• 1 box of white (Button) mushrooms (to be halved)• 2-3 Redskin Potatoes (to be chopped)• 1 packet of French Onion Soup Mix• 1 pinch each of Sea Salt, Black Pepper and Cayenne Pepper.• 1/2 Tsp Minced Garlic
Cut the roast into fist-sized chunks
Halve the button mushrooms
Cut the red bell pepper into short strips
Chop the potatoes into eighths or quarters
Sear the chunks of beef in a pan with the minced garlic, sea salt, black pepper and the diced onion before dumping all of that into the crockpot. The chunks are also easier to fully submerge in the broth, which is key to making it juicy.
Add Bourbon, Coke, Beef Stock, Red Pepper slices, Mushroom halves, Potato chunks, Sea Salt, Black Pepper, Cayenne Pepper and French Onion Soup Mix.
cook on Low for 8-12 hours, or just overnight.
Don't lift the lid until it's done or you'll lose moisture.
Serving Size: ~8, 2-cup servings. Very filling.
