Ingredients
2 lb ground sirloin2 cups dry brown jasmine rice - cooked in 4 cups water1 large head of green cabbage1 cup small diced carrots2 cups low sodium spicy V8 Vegetable juice
Directions
brown and drain ground beef in a pan. Add cooked rice.Stir to combine. Place whole cabbage on a large pot with a strainer inside with 4 inches of water. Steam cabbage 20- 25 minutes. When cool enough to handle , carefully peel leaf by leaf - keeping them whole. Take about 1/4 cup filling place inside each cabbage leaf and roll using envelope type fold. Place seam side down in large crock pot / slow cooker. Pour V8 juice over top and the diced carrots . Cook on high 2 hours , lower temp and continue to cook another 1 - 4 hours until tender. Serving is 2 cabbage packets.
