Hearty Tomato Vegetable Soup

1 Full Carton of Pomi Brand Chopped Tomatoes (may substitute 2 cans tomatoes)2 Carrots, Sliced thin2 Celery Stalks Sliced thin1 med yellow onion, chopped fine1 bell pepper chopped fine1 tsp coconut oil1 cup almond milk2 cloves garlic pressedItalian Seasonings and Celtic Sea Salt to Taste
Chop and sauté fresh vegetables in coconut oil until just tender. Add full carton of Pomi Chopped Tomatoes and 1 cup almond milk and bring to a simmer. Cook on low for about 30 minutes until all flavors have blended.
Press 2 cloves of garlic and add to soup. Add Celtic Sea Salt and Italian Seasonings. Serve piping hot by a crackling fire!
