*2 sprays coconut oil cooking spray*2 shallots, minced*Apple Chicken Sausage, 5 links*2 cups frozen spinach*4 TBSPS Parmesan cheese*14 large eggs
1) Preheat oven to 350 degrees F. Spray 1 (dozen) cupcake pan with cooking spray, and distribute all ingredients (except the eggs) among the cups.
2). In a separate bowl, mix the eggs and distribute egg mixture among the cups.
3) Bake frittatas for 20-30 minutes, or until cooked through. Enjoy immediately, or freeze for an easy make-ahead breakfast on the go!
