Cherry Balsamic Vinegrette

1/4 c balsamic vinegar1 Tbsp sugar1 clove of garlic, minced1/4 c cherry preserves1/4 c red wine vinegar1/4 c canola oilkosher salt (optional, not included for nutritional info)black pepper (optional, not included)
In a small saucepan over medium heat, combine balsamic vinegar, sugar and garlic and bring to a simmer, stirring frequently to dissolve the sugar.
simmer the mixture, uncovered until reduced by half about 10 minutes.
Add cherry preserves and cook 1 min longer.
Remove from heat and let cool to room temperature.
whisk in the red wine vinegar, followed by the canola oil.
season to taste with salt and pepper, set aside.
Serving Size: Makes ~ twelve 1 tbsp servings
