200g lentils, 1.5 pints of water, 1 tsp turmeric, 2 oz buttter, one onion, sliced into half rings, 2 cloves garlic, 1 tsp cumin seeds, 1 tsp ground corriander, salt and pepper to taste.
Directions
Rince and pick over the lentils. Put them in a pan with the water and turmeric and simmer until the lentils are soft (about 20 minutes). Meanwhile slowly, over a gentle heat, saute the onion (sliced into half rings) in the butter until golden brown. Add the garlic (sliced thinly or crushed) and saute for another few minutes. Add the spices and heat for one more minute. Stir into the lentils and season to taste. You can cook the lentil paste down thicker if you prefer, or leave more soupy.
