Miracle Creamy Soup

1 Head cauliflower1 Bouillon Cube2 large Parsnips1.5 cup chickpeas210 grams Canned Chickpeas (Around a cup)2 cloves garlic0.5 onionGarlic Powder, Cumin, Salt and Pepper to taste.*Use vegetable bouiilon cube for a vegan/vegetarian option.
Dry roast Chopped garlic and onion in a soup pot with thick bottom.
Dissolve bouillon cube in water.
Add bouillon mix to pot, simmer for a bit.
Chop cauliflower
Peel and Chop Parsnip
Add Cauliflower, parsnip and chickpeas to pot, cover with water.
Let simmer for an hour, season to taste.
Blend with a hand blender or transfer to a blender to puree.
Serving Size: Makes 8 cups (1 serving = 1 cup)
