YAM & SWEET ONION SOUP

Ingredients
1 Tbsp unsalted butter1 lg sweet onion, diced1 Tbsp curry powder2 med yams or sweet potatoes (about 1 1/3 lb total), peeled & diced4 c reduced-sodium chicken or vegetable broth or stock½ c half-&-half or evaporated milkFresh chives, cut into 2” pieces (optional)
Directions
1. Melt butter in saucepan over medium heat. Add onion, curry powder, & ¼ tsp pepper. Stir until aromatic, about 5 minutes. Add yams & broth. Simmer, covered, until vegetables are tender, about 30 minutes.
2. Transfer to blender in batches & puree until smooth. Stir in half-&-half until thoroughly combined. Season to taste & garnish each serving with a few chives, if desired. (Makes about 5 cups.)
