Slow cooker - Turkey Vegetable Soup

Ingredients
Turkey LegTurkey ThighTurkey Wing2 cups diced carrots2 cups diced celery2 cups diced onion6 cup Turkey StockTurkey Stock:Slow cook leg, thigh, and wing with chopped carrot, celery, onion, and herbs for 6 hours. Strain through fine sieve -- keep the stock for your soup.
Directions
Simmer leg, thigh, and wing with chopped carrot, celery, onion, salt, pepper, herbs (I use rosemary, garlic, and thyme) for 6 hours. Strain through fine sieve, return stock to the slow cooker. Let meat cool and strip it from the bones, return meat to slow cooker. Add new vegetables and simmer on low for another hour.
