Triple Sec Chocolate Mousse based on a Theme by Paganini

4 T Triple Sec1/4 c granulated sugar4 oz semisweet or bittersweet chocolate2 stiffly beaten egg whites2 T of unwhipped heavy cream 2 cups of heavy cream whipped
Combine Triple sec and sugar in a small microwave safe bowl, and heat on low to very low power, stirring often, until the sugar is dissolved.
Place the chocolate in another microwave safe bowl and heat on low power until just melted.
Add 2 T cream to chocolate, stirring it in gently.
Add sugar and Triple Sec syrup and stir in until mixture is smooth and allow to cool.
Fold in the egg whites.
Fold this mixture into the whipped cream.
Chill in a bowl, or, better, in individual serving cups for at least 2 or 3 hours.
Serving Size: makes 8 small bowl of mousse
