Quick Black Bean soup

Ingredients

2 tbl. olive oil1/2 cup chopped onion1/2 cup chopped green or red pepper3 cloves minced garlic1 - 2 Tbl chile powder1/2 - 1 Tbl ground cumin2 cups canned plum tomatoes diced6 cups canned black beans drained and rinsed with watersalt & perrper to taste
Heat olive oil in skillet. Add onion & green pepper. Saute until soft. Do not allow to brown. Add chile powder, ground cumin and minced garlic. Saute for 2 - 3 minutes.
Mash up to 1/2 of black beans if desired.
In a large pot mix black beans and onion mixture. Add tomatoes. Add 2 cups (or more if desired) of water. Cook over low heat for 10 minutes. Add salt & pepper as desired.
Add chopped jalapenos or green chilies to spice it up if desired.
Serve as is or with salsa, sour cream, or grated cheese.
Garnish with chopped scallions.
