Cannoli Filling

Ingredients
1 pint heavy whipping cream1/4 to 1/2 c powdered sugar1 tsp vanilla1 lb ricotta cheese, part skim1-6 oz pkg chocolate chips, chopped finely1/4 c ground walnuts12 maraschino cherries
Directions
Place whipping cream in freezer until very cold, but not frozen, about 1/2 hour. Place into cold mixing bowl and whip at high speed until very thick (almost butter). Add vanilla and powdered sugar (to taste). Reduce speed to low and add Ricotta Cheese, mixing just until blended. Add chopped chocolate chips, scraping sides of bowl, just until blended. Fill shells with filling. Roll ends in ground walnuts, garnish with cherry halves and sprinkle with powdered sugar.
