Healthy Chicken Cordon Bleu

- 4 4oz chicken breasts- 4 slices 2% milk Swiss cheese (Lucerne)- 4 slices deli ham (Trader Joe's no nitrites)- about 10 seasoned croutons, crushed.- 1 Tbs olive oil- toothpicks
Preheat oven to 350F. Pound clean, dry, chicken breast to about 1/2 in thick (I like to buy thin cut fillets). Place 1 slice of Swiss on top of each breast, then 1 slice of ham atop the cheese (you may need to cut ham and cheese to shape with chicken). Tightly roll each breast from fat end to tapered end, then secure with toothpick. Place in baking dish then roll chicken in olive oil. Top with crushed croutons and bake 35-40 min until chicken is cooked thoroughly. Remember to pull out toothpicks once cool enough before eating! Bon Apetit!
