Crock Pot Indian Chicken

Ingredients
2lb boneless, skinless, chicken thighs1 medium onion, diced3 cloves garlic8 tsp curry powder2 tsp ground ginger1/2 tsp salt1/4 tsp pepper2 cans garbanzo beans, drained & rinsed1 cup 99% fat free chicken broth2 tbsp lime juice2 cans diced tomatoes, undrained1 pkg fresh spinach
Directions
Cut chicken into bite-sized pieces. Add to crock pot. Add onion, garlic, curry powder, ginger, salt & pepper, beans, broth, tomatoes, and one bay leaf. Stir well to mix. Cook 8-10 hours on low. 15 minutes prior to serving, add 2 tbsp lime juice & 10oz pkg fresh spinach; stir well.
