Black Beans & Rice

Ingredients
Beans, black, 1.5 cup Brown Rice, long grain, 1 cup Sour Cream, reduced fat, 1 cup Yellow Sweet Corn, Frozen, 2 cup kernels *Green Chiles 1.13 oz Black Olives, small can slicedSalsa, 2 cup Mozzarella Cheese, part skim milk, 6 oz
Directions
Soak beans overnight and rinse. Combine beans, rice and salsa and cover with water. Simmer for at least one hour, adding water if needed. Add corn, olives, sour cream and dice chiles and add. Stir and simmer another half hour or so. Top with shredded cheese.
