Paleo Friendly Stuffed Pepper Soup

Ingredients1 lb ground turkey, beef (I used Beef)1 cup chopped onion3 garlic cloves, minced2 14 oz can of Muirs organic chopped tomatoes6 oz can organic tomato paste 2 cups chicken or beef stock (depending on whether you use turkey or beef) 1 1/2 C chopped green bell peppers 1 C chopped red bell pepper1 TBS dried basil leaves 1 TBS dried oregano1 tsp of Thyme1/4 tsp cayenne pepper (optional) sea salt and ground black pepper, to taste
Instructions
1. In a large nonstick skillet, brown meat and onion over medium/medium-high heat until browned
2. Add garlic, and cook for one minute, and turn off stove
3. Add canned tomato, tomato paste, broth, bell peppers, and seasoning to slow cooker
4. Stir in meat mixture from pan until well-incorporated, then cover
5. Cook on low all day or on high for 3-4 hours
6. Before serving, taste to see if salt and pepper need to be added
7. Enjoy!
