Tomato, Sausage and Winter Squash Soup

12 oz. pkg Soyrizo (vegetarian chorizo sausage) 2 Tbsp. coconut oil 1 yellow onion, diced 16 oz. frozen butternut squash 32 oz. vegetable broth 28 oz. crushed tomatoes 2 Tbsp. pure maple syrup
In skillet over high heat, cook soyrizo in melted oil. Add onion and cook until onion and sausage are browned.
Add butternut squash to bottom of slow cooker.Add remaining ingredients and stir to combine.
Cook for 4-5 hours on high, or 8-10 hours on low.
Serve hot, topped with oyster crackers.
