Black Bean Chicken

Ingredients
20 oz Boneless Skinless Chicken Breast Fillets3 cloves Garlic1 Tbsp Shallots3 Jalapeno Peppers1/2 cup Green Onions 1/4 cup Preserved Black Beans2 Tbsp Canola Oil
Directions
Slice the Chicken Breast Fillets 1/8 inch width. Mince garlic and slice shallots. Chop green onions and slice Jalapeno peppers lengthwise. Do not remove Jalapeno seeds.

Heat wok on high heat with oil for a minute. Add the shallots, garlic, sauteed for another minute. Add preserved black beans and stir fry another minute or till fragrant.

Add in the Chicken and stir fry for a couple of minutes. Finally, add in the Jalapeno Peppers and green onions and stir fry for another couple of minutes. Also, add a little light soy sauce and water. Stir fry till chicken is cooked and serve with white rice.
