Costa Rican Black Beans and Rice

1 cup slow cooking (not instant) brown rice 2 Tbsp. coconut oil 1 green bell pepper, finely diced 1 yellow onion, finely diced 1 1/2 tsp. minced garlic, (about 3 cloves) 1 tsp. ground cumin 1 tsp. curry powder 15 oz. canned black beans, with their liquid 2 Tbsp. soy sauce
In a large skillet, heat the oil over medium heat, and sauté the bell peppers, onions and garlic for about 5 minutes until they are fragrant and slightly tender. While they are cooking, stir in the cumin and curry powder.
add to slow cooker, along with black beans, soy sauce, rice and vegetable broth. Stir to combine, and cook on high 3-4 hours, or on low 7-8 hours.
Serving Size: makes 4 servings, 1 1/2 cup each
