Michelle's Pancakes

Ingredients
2 cups all purpose flour2 tbsp sugar2 tsp baking powder1 tsp baking soda1/2 tsp salt2 cups well shaken buttermilk (I use vinegar and skim milk)2 large eggs1/4 cup EVOO
Directions
Mix dry ingredients in medium bowl.
Add wet ingredients to a separate bowl and stir until just blended.
Add wet ingredients into dry ingredients until just combined. Do not over mix.
Lightly coat skillet with oil and heat to medium low.
Add pancake batter with whatever size scoop you like - I use one soup ladle for 2 pancakes.

Makes about 16 pancakes.
