Coconut Rice (adapted from Sara Moulton)

Ingredients
14 oz chicken or veg. broth3/4 cup basmati or jasmine ricegrated lemon zest (1 tbsp or about 1/2 a lemon) 1 tbsp ginger or a 2" piece fresh, peeled split & smashed1/4 tsp salt13.5 oz can unsweetened coconut milk
Directions
Heat broth to a boil on high. Stir in rice, lemon, ginger & salt. Cover, reduce heat to low & cook until broth is absorbed (8-10 mins). Add coconut milk; cover & return to a boil over low heat, cook stirring often until tender & most of the milk has been absorbed (8-10 mins). Remove lemongrass & fresh ginger b/f serving.
