Indian chicken curry

Ingredients
1 lb chicken breast, skinless, chopped into cubes1 can light coconut milk1 T Thai red curry paste1/2 cup frozen peas1 can bamboo shootssauteed onions, mushrooms, garlicfresh basilfish sauce
Directions
Saute chicken to sear outsides
Add onions, mushrooms, garlic, saute until translucent
add coconut milk & red curry paste, simmer for 10 min.
add basil, fish sauce, peas, bamboo shoots or any other vegetables you favor
Simmer for another 10 minutes
Serve with rice
