Directions
Cook the onion with the garlic and ginger in a pan with spray oil if you want it. Sprinkle the spices (cumin, garama masala, curry powder...whatever you have...cinnamon is good in this too!) After 2-3 minutes, add the spinach (or whatever greens you have) and the rinsed chickpeas. Add a little water and simmer for another several minutes. Add the can of coconut milk in, simmer, and you are done!
