6 eggs2.25 cups regular coconut milksalt, pepper and .50 tsp of nutmeg2 frozen pie crustsI medium eggplanttwo medium onions5 ounces of two kinds of cheese, 2.5 ounces each. Choose one that is a stronger cheese, like swiss or sharp cheese. Slice.Peel and dice the eggplant. Slice the onions thinly. Sauté in a skillet in 1 TBS of coconut oil until soft. Line browned pie crusts with slices of cheese.
Bake pie crusts first at 375 degrees to brown approx, 10 minutes. Combine the remaining ingredients without the cheese. Slice the cheese and lay the slices into the bottom of each crust. Pour the remaining mixture over the top of the cheese.
